The croquettes are perfect as an appetizer, but they also make a wonderful main course. I like to serve them with this flavor-packed Pimentón Dulce and yogurt dip, a seasonal side dish – like this sautéed broccoli with yellow and red bell peppers, or these Romano beans with butter, shallots and chives – and a crisp green salad.
