Quinoa and Scallion Croquettes

What’s most wonderful about these croquettes? Beyond their amazing flavor, it is undoubtedly their lightness. The ricotta (or fresh goat cheese) makes the croquettes incredibly moist, while the dainty quinoa keeps them featherweight.

The trick to this recipe is shaping the mixture without its falling apart! So I’ve created video clips to show you exactly how to handle the croquettes – making the task an easy one.

The croquettes are perfect as an appetizer, but they also make a wonderful main course. I like to serve them with this flavor-packed Pimentón Dulce and yogurt dip, a seasonal side dish – like this sautéed broccoli with yellow and red bell peppers, or these Romano beans with butter, shallots and chives – and a crisp green salad.
