Wild rice and fennel salad with grapefruit and watercressWho doesn’t love a salad full of zest and crunch…the kind that makes the taste buds perk up? I sure do! And this salad undoubtedly delivers on both counts.

Here, chewy wild rice and crisp fennel are tossed with toasted pine nuts and a citrusy vinaigrette spiked with fennel greens and a drop of honey. The scrumptious mixture is topped with vibrant grapefruit slices and spunky watercress.

As a last touch, the whole thing is drizzled with either lemon- or orange-infused oil, which brings one more delicious layer of flavor to this refreshing spring salad.
