This recipe is also a creative way to use all the fresh herbs stored in your vegetable drawer that are threatening to perish. You can literally throw in the skillet any fresh herbs you have on hand. Trim the tough stems off of parsley, but put entire sprigs of thyme or rosemary right in the pan. Once pan-fried, the herbs turn crispy and intensely flavorful – they’re absolutely delicious to nibble on.
