Pan-fried smashed potatoes with fresh herbs and garlic

Potatoes are of course versatile and can be delicious in whatever way you choose to cook them. But in this recipe, the humble tubers really become something special.

The potatoes are pan-fried in olive oil until they acquire a crispy brown edge that’s to die for! At the same time, they’re infused with the flavor of the garlic and fresh herbs as they cook. The aromas that emanate from the kitchen as you cook these roots will make everyone in your house run to see what’s happening on the stove!

This recipe is also a creative way to use all the fresh herbs stored in your vegetable drawer that are threatening to perish. You can literally throw in the skillet any fresh herbs you have on hand. Trim the tough stems off of parsley, but put entire sprigs of thyme or rosemary right in the pan. Once pan-fried, the herbs turn crispy and intensely flavorful – they’re absolutely delicious to nibble on.
