Spring risotto with asparagus pesto and roasted yellow peppers

Risotto is an exceptional dish. Not only is it one of the most delicious ways to enjoy rice, but all that stirring makes you feel like you’re eating something that benefited from an unusual amount of love and pampering – every spoonful tastes of all that goodness!

This risotto is no exception and certainly, a lot of tender loving care goes into making it. But the flavor-packed asparagus pesto, stirred in right before serving, turns this dish into the creamiest, most delectable risotto you’ll ever taste.

To round things off, the risotto is topped with sweet, roasted yellow peppers and crunchy asparagus tips seared in a little butter.

I agree all the stirring does make risotto special! It sounds lovely with the asparagus pesto and those pretty yellow peppers on top.
