Grilled romaine with Parmesan-lemon fonduta and garlic breadcrumbs

Caesar salad is one of the most delicious dishes ever created—who can resist the crunch of romaine lettuce topped with a cheesy, garlicky, lemony vinaigrette and crispy croutons?!

For this salad, my goal was to take the signature flavors of Caesar salad and to completely re-work them. The romaine lettuce ends up on the grill, charred until barely wilted (yet wonderfully smoky). The Parmesan and lemon become a creamy, tangy fonduta. The croutons are downsized to fine crumbs that are toasted and infused with pungent garlic.

You might not recognize the famed Caesar salad here, but I assure you that the classic flavors prove to be a winner—no matter how you style them.
