Chilled roasted zucchini soup with basil and fried capers
Pan-roasting the zucchini turns this chilled soup into a flavor bomb – You’d never have guessed that zucchini could have so much spunk!

But the soup is also laced with other flavors that compliment the roasted zucchini to perfection – A handful of fresh basil brings a delicious liveliness, red pepper flakes a bit of heat, and fried capers a salty punch.

If you think chilled soups are rather delicate, think again, because this soup will take your taste buds on an exhilarating ride!

Talk about FLAVOR! Zounds! Another superb recipe that really hits a home run. I’m a huge fan of each of these ingredients, but it takes a genius like V to be inspired enough to put them together. The capers were a wonderful surprise.

Sky, reading your comment made me smile from ear to ear! THANK YOU for taking the time to pop in and let me know how the soup turned out for you. I’m thrilled you liked it. As you know, flavor is my muse, and it manifested itself in surprising, but delicious ways in this recipe!
