Pistachio gelato served with cherry compote with Cognac

Here’s a gelato that’s filled with the essence of pistachios (no fake green coloring in this recipe!). First the milk is infused with ground pistachios, then deep, aromatic pistachio oil is added to the base to intensify the nutty flavors of the gelato.

This gelato is light, yet richly flavored and creamy. Topped with a luscious cherry compote, it’s so delicious that it most certainly calls for seconds.
