This corn salad is all about the succulent sweet corn! The kernels are sautéed for a few minutes to soften them and extract their sweetness, while Jalapeño peppers are added to impart a little heat and smokiness. Then, just before serving, loads of fresh herbs are tossed in to bring a wonderful freshness to the salad.
