Frittata with fingerling potatoes and roasted tomatoes

This humble frittata is so delicious and satisfying that you don’t need to wait for Sunday brunch to indulge. Indeed, it makes for a wonderful light dinner!

Here the fingerling potatoes are sautéed until golden and crisp (what better way to enjoy them?!), then paired with deeply flavorful roasted tomatoes. The eggs themselves are seasoned with fresh parsley and a little Parmesan, which brings a wonderful savoriness to the dish.
