Limoncello Bellini

Every year, when Meyer lemons are in season, I make several batches of this limoncello. So there are always a couple of bottles of the fragrant liqueur tucked away in my freezer! And aside from sipping it after dinner from time to time, it often ends up in this glorious Bellini.

Beet Bellini with pickled ginger

Beets might be a vegetable, but they are inherently sweet and lend themselves marvelously to this Bellini. Here red beetroots are juiced and then mixed with ginger liqueur, fresh ginger juice and Prosecco to make a most dazzling cocktail. The garnish of the pickled ginger only makes this Bellini more enticing.

Kir Royal

Kir Royal – the ultimate elegant cocktail – evokes thoughts of Paris and grand festivities (at least to me!). And why shouldn’t it? After all, the main ingredient in this sublime cocktail is Champagne and most of us don’t sip Champagne every day. We save it for special occasions. And that’s a good thing; it gives us a chance to really savor this supreme beverage without taking it for granted.

This utterly delicious and sophisticated mojito is topped with Champagne or sparkling wine instead of club soda. I serve it with no ice, so as not to dilute the delicious bubbles.
