What is simple syrup?

Simple syrup is a marvelous ingredient, made with just water and sugar, that’s used to sweeten cocktails, sorbets and other desserts. It only takes a few minutes to make a batch and it’ll save for several weeks in the refrigerator.

The secret to the best homemade simple syrup – keep your sugar and water pure!

Since I only use organic sugar in all my recipes, the syrup will have a light-brown hue – a worthy sacrifice, since organic sugar tastes infinitely better than the bleached kind.

Last but not least, make sure to use filtered or spring water for this recipe. You wouldn’t want foul-smelling chlorinated tap water to end up in your syrup!

Organic sugar

Simple syrup (made with organic sugar)

makes 2 1/2 cups
active time: 5 min

  1. 2 cups spring water
  2. 2 cups organic sugar

  1. camera icon Place the water and sugar in a medium heavy-bottomed saucepan and bring to a boil. Reduce heat to medium and simmer for 2 minutes until the sugar has dissolved and the syrup slightly thickens, stirring occasionally. Transfer to a bowl and let cool to room temperature. Pour into a squeeze bottle, or glass jar, and refrigerate for up to 1 month.
